Low Carb – Chocolate Peanut Butter Treat
Today I would like to share a low carb, peanut butter fudge treat for those of my clients who are KETO or just want a low calorie sweet treat craving replacement.
If you are not on the KETO diet, or just want to make the treat higher protein to reduce the guilt of having a sweet treat even further, substitute the cocoa powder for 1-2 scoops of a chocolate protein powder. Reach out for suggestions on which protein powder is right for you.
20 Sweet Treat Fudges
Fudge Peanut Butter Melts: Stir together equal parts coconut oil and unsweetened peanut butter or almond butter. Add vanilla extract, a pinch of salt, freeze until solid, and store in the freezer.
📋 Ingredients
• 1/2 cup Wellesley Farms Organic Creamy Peanut Butter
• 1/2 cup Wellesley Farms Organic Extra-Virgin Coconut Oil
• 4 tablespoons Grand Primo Dutch Cocoa Powder
• 4 to 5 tablespoons Monk Fruit Sweetener with Allulose (adjust to your sweetness preference)
• 1 teaspoon Adams Pure Vanilla Extract
• 1 pinch Salt
🥣 Step-by-Step Instructions
1. Melt the Base
Place the Wellesley Farms Coconut Oil and Creamy Peanut Butter into a microwave-safe bowl. Microwave on high for 30 to 45 seconds until completely melted. Stir well until the mixture is uniform and smooth.
2. Create the Chocolate
Add the Grand Primo Dutch Cocoa Powder into the warm liquid base. Stir vigorously with a spoon or a small whisk until the cocoa is fully dissolved and the mixture turns into a glossy, smooth chocolate sauce with no lumps.
3. Sweeten and Flavor
Stir in the Adams Pure Vanilla Extract and a pinch of salt. Add your Monk Fruit with Allulose sweetener one tablespoon at a time, tasting as you go, until it reaches your preferred sweetness level.
4. Pour and Mold
Line a small dish or loaf pan with parchment paper. Alternatively, use a silicone ice cube tray or mini muffin liners. Pour the liquid fudge mixture evenly into your chosen mold. [1, 2, 3]
5. Freeze to Set
Place the pan flat in the freezer. Freeze for 45 to 60 minutes until the fudge is completely solid to the touch.[1, 2]
I recommend using an ice cube tray. It allows you to set the treats into 20 equal servings which brings the macros out to roughly;
